MENU | BRUNCH AND LUNCH

Easy and typically informal, lunches and brunches are a great way to entertain for those who donít want the formality or demand on time of a dinner party. Long gone are the days when brunches were only suited for post-wedding get-togethers and baptisms; They offer hosts a relaxed, often less expensive way of providing an interesting meal for any size crowd. Lunches too, are perfect for everything from Ladies Days Out to Corporate Meetings.

Please choose between the two following:

 

Chef-made omelette station – toppings to include:
Sauteed wild mushrooms • Diced roma tomatoes
Caramelized onions • Kalamata olives
Grated-three cheese blend• Fresh chopped herbs
Cubed smoked ham • Poached asparagus tips

OR
Please choose two of the following quiches with phyllo crust:
Wild mushroom and fontina cheese with fresh herbs
Arugula, roasted red pepper, Italian sausage and goat cheese
Mediterranean – Tomatoes, black olives, feta and fresh oregano
Caramelized onion with cheddar, bacon and spinach
Asparagus and smoked salmon


Please choose between the two following:

 

Citrus glazed ham served with assorted mustards

and cheddar thyme biscuits

OR
Platter of smoked salmon served with capers, shaved red onion, lemon,

mini bagels and whipped cream cheese

 

Suggested for all Menus:

Baby greens with champagne vinaigrette, pomegranate seeds
Fresh croissants, pastries and breakfast breads
served with butter and preserves
Platter of fresh sliced fruits
Colombian coffee and tea

Lunch #1:
Jerk rubbed salmon with mango salsa
Lime chili marinated chicken kebabs with lime aioli
Roasted potato salad with caramelized shallot and ancho sour cream dressing
Baby spinach with dried cranberries, sunflower seeds
and a citrus vinaigrette


Lunch #2:
AAA beef tenderloin served with homemade thyme-scented horseradish
– add $3
Lemon dill roasted salmon served with sauce vierge
Lentil and wild rice pilaf with fine herbs
Baby greens with toasted almonds, balsamic maple dressing


Lunch #3:
Thai glazed chicken breast, sweet chili drizzle
Grilled green curry spiced shrimp and whitefish skewers
Rice noodle salad, endamame, sautéed shiitake,
fresh coriander and a ginger dressing
Sesame-scented asparagus


Lunch #4:
Classic meat and three cheese lasagna

Wild mushroom lasagne, fontina and thyme
Crisp romaine, creamy green peppercorn dressing,
herbed croutons, shaved parm
Marinated rapini, slivered garlic and pepperoncino
